The Provolo Amarone della Valpolicella DOCG is a majestic and complex dry red wine from the Valpolicella region of Veneto, Italy. Unlike traditional reds, Amarone is produced using the Appassimento method: the primary grapes—mainly Corvina (including Corvinone) and Rondinella—are carefully hand-harvested and then laid out on drying racks (often called arele) for up to 120 days. This process causes the grapes to lose up to 40% of their water content, concentrating their sugars, flavors, and tannins.
Provolo, a producer with a long tradition in the region, crafts an Amarone that is typically characterized by its intense ruby red color that matures toward garnet with age. On the nose, it offers a pronounced bouquet of prunes, black cherry in alcohol, cocoa, sweet spices like cinnamon and nutmeg, and often balsamic or toasted notes. The palate is full-bodied, rich, and velvety, offering a distinctive balance that is both dry and austere, yet simultaneously soft and harmonious. With high alcohol content (often around 16%), the wine possesses excellent structure and a notable aging potential, often capable of evolving gracefully for 20 to 25 years. It is typically recommended with rich foods like braised red meats, game, and aged cheeses.
