The NV Brut Réserve, a combination of more than 60 different crus and 150 wines, evokes aromas of brioche, pastry, ripe orchard fruits, beeswax and spices. Medium to full-bodied, enrobing and charming, it has a fleshy core of fruit, a pinpoint mousse and delicate acids, making it a charming, delicate Champagne. This blend consists of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier, with 50% vins de réserve, and was disgorged with a dosage of nine grams per liter. (YC)

The complexity is the result of what the house calls the “three pillars” of its style:

  1. The Blend: It maintains a precise balance of approximately 40% Chardonnay, 40% Pinot Noir, and 20% Pinot Meunier, sourced from around 60 different crus.
  2. Reserve Wines: The most critical factor is the incredibly high proportion of reserve wines, often exceeding 40% of the final blend, with an average age of ten years and some wines dating back over fifteen. This is significantly higher than the industry average and lends the wine its signature maturity and richness.
  3. Aging: The wine is aged for a minimum of three to four years on its lees in the house’s ancient Roman chalk cellars (crayères), far exceeding the required 15 months for non-vintage Champagne.

This dedication to time results in a deep golden hue and a luxurious profile. The nose is voluptuous, offering notes of freshly baked brioche, toasted nuts, ripe stone fruits (like mango and apricot), and hints of marzipan. On the palate, it is creamy and textural, with flavors reminiscent of nougat, plump red plum, and toasted vanilla, balanced by a lively acidity that ensures a long, harmonious finish.
