Sartori di Verona, founded in 1898 by Pietro Sartori, is a cornerstone of the Valpolicella region. Initially a hotelier in Verona who sought to supply his own establishment with high-quality “Veronese Rosso,” Pietro’s passion evolved into a legacy of winemaking excellence. Following the challenges of the mid-20th century, including the recovery from World War II, the winery expanded significantly under the leadership of his son, Regolo, and eventually transitioned into a modern, global enterprise under the fourth generation, Andrea Sartori. Today, the estate is celebrated for its dedication to the appassimento technique—the ancient practice of air-drying grapes to concentrate sugars and flavors—which remains the defining pillar of their production philosophy.
It is important to note that “Amarone” and “Recioto” are distinct, individual styles of Valpolicella wine rather than a single classification. While both utilize the appassimento method, **Amarone** is a dry, full-bodied red wine where fermentation is completed to convert nearly all sugars to alcohol. Recioto, conversely, is a sweet dessert wine created by halting fermentation before all sugars are consumed.
The growing season in the Valpolicella Classica zone is defined by a temperate, Mediterranean climate moderated by the influence of nearby Lake Garda, which helps prevent extreme temperature shifts. Summers are typically warm but kept comfortable by cooling breezes from the Lessini Mountains, which mitigate humidity and promote vine health. This stable environment, combined with the region’s diverse, well-draining soils, ensures that grapes like Corvina, Corvinone, and Rondinella can achieve the slow, optimal ripening required for the intense concentration necessary for both Amarone and Recioto styles. This balance of rhythm and natural care allows Sartori to craft wines that remain deeply rooted in Veronese tradition while meeting contemporary global standards.
