Wonderfully subtle, complex aromas of white flowers, acacia honey, minerals, nuts and mushroom, with musky and leesy nuances. Oily, rich and smoky but with terrific verve and lift. Quite substantial and chewy for a young D.P. but not at all heavy. Yellow plum and strong soil tones in the middle and on the palate-staining finish. A bevy of Dom Pérignons followed. The more I taste DP the more I am convinced that the most consistently reliable bottlings are impeccably well-stored original releases, rather than the far pricier Œnothèque series. Dom Pérignon is the prestigious prestige cuvée of Moët & Chandon, named after the 17th-century Benedictine monk who made significant contributions to the development of the “methode champenoise.” Since its commercial debut in 1921, the house has maintained a strict philosophy: Dom Pérignon is always a vintage champagne, produced only in the most exceptional years from a blend of Pinot Noir and Chardonnay. The winery sources fruit from all seventeen Grand Cru villages and the historic Premier Cru of Hautvillers. By 1995, the estate was under the expert guidance of Chef de Cave Richard Geoffroy, who championed the concept of “Plénitudes”—different windows of development where the wine reaches a peak of expression. The 1995 vintage is celebrated for its classic proportions and its role in demonstrating the legendary aging potential and transformative power of the house’s signature reductive style.
The 1995 growing season in Champagne was characterized by a dramatic weather pattern that ultimately favored power and concentration. After a mild winter, the region experienced a rainy spring followed by a significant cold spell during the flowering period, which naturally reduced the crop size. However, the season was redeemed by a hot and exceptionally dry summer that persisted through the end of August. These drought-like conditions were broken by beneficial rains just before the harvest in mid-September, which allowed the grapes to reach a perfect balance of phenolic ripeness and high sugar levels while maintaining a refreshing acidity. This “solar” vintage resulted in fruit of exceptional health and intensity, producing a 1995 Dom Pérignon known for its creamy texture, vibrant mineral core, and an expansive aromatic profile that has allowed it to age with remarkable grace over the last three decades.
