The original release is fabulous — rich, explosive and incredibly inviting, with magnificent depth and “pedigree to burn.” The first hints of aromatic nuance are only beginning to develop in a wine that still comes across as remarkably youthful. It loses some intensity across several hours in the glass but remains superb. Galloni called it a tremendous showing.

The original disgorgement, still drinking splendidly, tasted alongside the 1975 Bollinger R.D. at a memorable dinner. A bright, complex bouquet of peach, apple, a touch of caraway seed, refined minerality, walnut, smoky overtones and the classic Dom Pérignon white truffle note. Deep, full-bodied, long and still vibrant on the palate, with excellent mousse for a bottle of its age, a fine core and mineral drive through a bright, focused, very long finish. Gilman judged it outstanding and “at its apogee today.”

Dom Pérignon takes its name from the Benedictine monk who served as cellarer at the Abbey of Hautvillers from 1668, and who spent the remaining forty-seven years of his life pursuing what he called the best wine in the world. The modern cuvée follows one rule above all: it is made only from a single harvest, never blended across years, and only in vintages the house judges worthy. Where other prestige cuvées chase richness, the chef de cave here has always sought aromatic finesse, a silky texture and honed elegance. In 1975 the wine drew on Hautvillers and eight grands crus, the Chardonnay from Avize, Chouilly, Cramant and Le Mesnil, the Pinot Noir from Aÿ, Bouzy, Mailly and Verzenay.

1975 is one of the great Champagne vintages. Harvest began on 29 September and had to be brought in quickly as the weather turned, and the small crop that resulted was high in acidity, giving the wines the structure to age for decades. That has proved true here. Critics tasting the original disgorgement in its forties found it still vibrant, with a bright, complex nose of peach and apple, caraway, walnut, refined minerality, smoke and the white truffle note that marks mature Dom Pérignon. The palate remains deep, full-bodied and long, the mousse still fine, the finish carried by mineral drive. This is a wine at its apogee.
