(Récemment Dégorgé) Extra Brut is a legendary vintage Champagne that embodies Madame Bollinger’s visionary concept: releasing an old vintage that has undergone prolonged aging on the lees, disgorged just prior to sale. This technique creates a wine that contrasts the profound aromatic intensity derived from 10 to 14 or more years of aging under cork with a striking freshness, emphasized by an extremely low Extra Brut dosage (typically 3 grams per liter). The blend is predominantly Pinot Noir (around 70%) and Chardonnay, sourced entirely from Grand and Premier Cru vineyards. Vinified entirely in oak barrels, the R.D. cuvée is celebrated for its complexity, power, and tension. Tasting notes frequently describe chiseled structure, electric acidity, and a rich, creamy mousse, delivering savory flavors of brioche, honey, dried apricot, hazelnut, ginger, and citrus zest. To highlight its unique quality, Bollinger pioneered the practice of printing the exact disgorgement date directly on the label, guaranteeing transparency and affirming its exceptional character and decades-long aging potential.
